Somehow, for me, waffles have a memory attached with vacation time. I think I might have associated them with bed and breakfast and journeys or dining at a five star hotel or restaurant. They are ideal for breakfast! This is why; I decided to explore making Red Velvet Waffles at home whenever I felt like having a time out from the stress of work and routine life. I can make any day special as long as I have a waffle on my plate!
They taste amazing with some topping like cream, ice cream, or molten chocolate. If you have not tried it with maple syrup, then I must recommend that you do that the next time you find yourself at a waffle joint. Just drizzle some of it on a serving and feel it melt in your mouth. It’s to die for … so here’s my personal recipe! Hope you love it!
Ingredients for Red Velvet Waffles
It serves six people. You need the following ingredients so I’d recommend setting them up on your worktable.
- 3 large eggs, separated
- 1⁄4 cup brown sugar
- 1 teaspoon of baking soda
- 1 tablespoon of red liquid food color
- 1⁄2 teaspoon of table salt
- 1 1⁄2 tablespoons of cocoa powder, natural unsweetened
- 4 tablespoons (or 1⁄2 stick) of unsalted butter, melted
- 1 teaspoon of baking powder
- 2 cups leveled, all-purpose flour
- 2 cups of buttermilk
Method
First, preheat the oven bringing it to 200 F. Preheat a waffle iron as well.
Whisk the flour, baking soda, baking powder, and salt together in a bowl.
Add melted butter and the brown sugar in a separate bowl.
Whisk the buttermilk and egg yolks.
Then add the cocoa powder and red food color in a small bowl. Mix until it forms a smooth paste.
Mix in the butter and sugar mixture with the cocoa mixture until it becomes moist.
Beat the egg whites separately in a medium bowl. Better to use an electric mixer. Mix until it becomes stiff.
Add only ¼ of the egg whites into the stiff batter to lighten it. Gradually fold in the egg white, do not be thorough.
Spray a waffle iron (preheated) with some nonstick cooking spray or use a brush to put some melted butter on it. Put in the waffle paste and according to the manufacturer’s instructions. Let them bake.
Remove them on a baking sheet and slide them over to keep them warm while preparing other Red Velvet Waffles.
Cream Cheese Drizzle
Here’s how I make the creamy cheese drizzle to go with the Red Velvet Waffles.
Ingredients
- A pinch of table salt
- 4 ounces of softened cream cheese
- ½ teaspoon of vanilla extract
- ¾ cup of confectioners’ sugar
- 3 to 4 tablespoons of creamy milk
Method
Beat the cream cheese, vanilla, confectioners, and salt in a bowl. Add milk and beat it until it becomes a pourable mixture. Before serving the Red Velvet Waffles, just pour some of it on top as a dressing and serve.
It’s mouthwatering!
